Blueberry oat bars
These blueberry oat bars are super easy to make and incredibly delicious. Packed with protein and completely plant-based. An ideal snack for in-between or with coffee.
Feel free to get creative with this recipe. Add some chopped nuts or dried apple pieces. Also delicious: grated coconut as a topping!
Important: make sure to make the oat bar base about 0.5 to 1 cm thick so that the bars don't fall apart when you cut them.
Instructions
- Preheat the oven to 160 degrees.
- Line a baking tray (such as a small brownie tray) with parchment paper and set aside.
- Mix the ingredients that will form the bottom layer of the blueberry bars: oat flour, oats, Orangefit Protein, coconut blossom sugar, cinnamon, baking powder, and a pinch of salt.
- Then add the melted butter and agave syrup to the mixture. Gently knead with your hands until all the ingredients are well combined.
- Spread ¾ of this "dough" over the parchment paper and distribute it evenly on the bottom.
- Use your hands to gently press down the crust.
- Next, add the blueberries/red berries to a saucepan and heat over medium-high heat. Add a small splash of water and the lemon juice, then sprinkle in the cornstarch.
- Let it thaw and simmer gently over medium heat while stirring regularly. Use a spoon or fork to crush some of the berries, creating a liquid blueberry sauce.
- Allow this mixture to simmer gently for a few minutes to thicken the sauce.
- Then, spoon the sauce on top of the oatmeal crust and spread it evenly.
- Crumble the remaining oatmeal "dough" over the blueberry sauce.
- Place the baking tray in the oven for about 25-30 minutes.
- Allow it to cool completely, then lift the parchment paper out of the baking tray. This will make it easier to cut the blueberry oatmeal bars.
